Banana Bake-a-Palooza

Yes, I am keenly aware that this is not a meringue swirl a la Martha. But in my defense we had bananas that were about to go off, so what else was I supposed to do? When life hands you brown bananas, you make banana bread. Or cakes, in this case.

Now, the only thing left to decide on is frosting: peanut butter buttercream, salted caramel, or a nice smooth lemon glaze?

    • Excellent choice! I was thinking the same thing myself, but the peanut butter/banana combo is usually the main reason for baking anything banana-related. But, change is good right?

      Wait a minute…there are more than one set of cupcakes here waiting to be frosted, so maybe I could do all three!

      • Oh sweet Jesus – you must try it!! I hadn’t either until I happened across a cupcake place here that served something called The Elvis: banana cupcake, peanut butter frosting topped with a piece of candied bacon. Heaven! What I make is much more simplistic, but in homage to that glorious moment.

      • hahaha, yes, I live in a van so belongings have to be thin on the ground but I seem to have 4 cake stands crammed into various corners/cupboards/shelves! Absolutely necessary of course!

      • Of course! I’m sure you’ve also managed to store a few teapots and cups n saucers as well in there.

        So jealous you live in a van and can bake wherever you like. Must be an amazing experience!
