An homage to my husband’s favourite beverage from the southern US drive-in chain, I was inspired to make this grown-up version of a sno-cone by the fact that the nearest Sonic is in Indiana. Trust me, we’ve thought about driving it, but I thought I would try to recreate the flavours instead. It saves on gas money.
Recipe adapted from the Early Summer 2012 edition of LCBO Food & Drink
2 cups limeade drink, soda or juice
2 cups soda water
2 tsp vanilla
3 tsp maraschino cherry syrup
1/2 cup white granulated sugar
Combine all ingredients and stir until the sugar is completely dissolved
Freeze for one hour in a large non-metal baking dish covered with cling film, then remove from freezer and stir partially frozen ingredients again.
Return covered dish to the freezer for another two hours. Scrape the frozen product with a fork so that the ice resembles small, loosely packed granules and serve immediately.
Return any remaining granita to the freezer to enjoy the next day.
